Louisa's Lovely Oatmeal Breakfast Bar Recipe
This is a very yummy and very easy recipe. You can use any dried fruit; small bits work best, such as cranberrys and raisins. You can buy seeds in packs that are already mixed, which should save additional time.
What you need:
- 397g condensed milk (1 can)
- 250g rolled oats (not instant)
- 75g shreded coconut
- 100g dried fruit
- 125g mixed seeds
- 125g cashew nuts (works with any nuts)
What you do:
- Preheat oven - Very low - Gas mark 1
- Put a little oil in a baking tin, or use a foil throw away one (ideally 23x33x4cm)
- Warm the condensed milk in a pan - do not allow it to boil
- Mix together all the other ingrediants in a big bowl
- Add the warm milk to the mixture - mix together using a wooden spoon
- Once all the mixture is covered in the milk it will be all sticky
- Spread the mixture into the tin and press down firmly
- Bake for 1 hour
- Leave to rest for 15 minutes and then cut into small bars
